Gosh! Healthy Comfort Food…

My dietary requirements are complex to say the least: I am allergic to dairy, gluten & soya, I choose not to eat meat and I am currently managing IBS, so at present cannot eat a number of foods, including chick peas and lentils, which are my normal go-to foods! So it can be challenging to eat well and and enjoyably at time and i LOVE food! So I was really excited when I was invited by Gosh Free From to try and review some of their products. I already ate lots of their range, so it was a no brainer for me to agree, especially as all of their products are free from all of the top allergens ( Gluten, soya, egg, milk, nuts, lupin, celery, mustard, sesame seeds & sulphites!) and Vegan.

This meal is quick , easy,  (I don’t do complicated or time consuming cooking, it’s all about the 10 minute meals for me), healthy, tasty and has an element of comfort so perfect for a rainy day! What more could you need!? The burger itself  is really tasty, filling and the minty centre adds a juicy twist. Often I can find vegan or Vegetarian burgers a bit dry, but this one was delicious!

GOSH! Mixed Seed, Quinoa, Carrot & Coriander bakes with a minted pea centre with Stir Fried Green Veg doused in Apple Cider Vinegar

Method
Oven Bake the burger for around 15 minutes, in the meantime, chop up any left over veg you have  in the fridge (I used broccoli, courgette and carrot), stir fry in a little oil (We always use rape seed oil for cooking, in this house, as it contains the lowest saturated fat content of any oil – less than half that of olive oil. It’s a great source of Omega 3,6,9, Contains no artificial preservatives and is trans-fat and GM free). add a drop of water to help the vegetables steam and sprinkle with Turmeric, salt, pepper and any other herbs you fancy (I add turmeric to all of my cooking because of its powerful inflammatory benefits).

Once cooked, douse the veg in apple cider vinegar, (read why I add apple cider vinegar to anything &  everything I can  here) slice the burger and place on top, then literally devour! I can’t tell you how good this was! Enjoy x
